    • Cut the aloe vera into bite-sized cubes.
    • Mix the aloe vera with the juice of 1 fresh lemon and let it sit for 5 minutes, then rinse thoroughly with cold water.
    • Bring a pot of water to a rolling boil, add the aloe vera, and blanch for 1 minute. Remove and rinse thoroughly with cold water. The aloe vera is now crisp, free of sliminess and bitterness, ensuring a perfectly sweet and refreshing lotus seed and aloe vera dessert.
  • In a pot, add enough water to cook the dessert (about 1.5 liters), along with the prepared lotus seeds and rock sugar. Cook over medium heat until the water boils, then reduce to low heat and simmer until the lotus seeds are soft and slightly split.
